Tales from the Kitchen: Grilled Peach Chicken Recipe

Fresh peaches are a seasonal item and late summer is the season! As an avid fan of ALL things peach, from melba and cobbler to fresh peaches straight off the tree, it will come as no surprise that grilled peach chicken is a favorite in our family. Not only is it delicious, it is also incredibly simple…the perfect recipe to whip up for the last lazy days of summer with family and friends!

I came across the recipe online a number of years ago and make it a point to keep the ingredients on hand so I can produce a lovely quick gourmet dinner for impromptu guests.

Grilled Peach Chicken

this recipe serves 4 (but easily adjustable to serve however many you need to!)

Ingredients:

4 boneless chicken breasts (my personal favorite is Bell and Evans for superior flavor)

salt and pepper (fresh ground)

1 cup peach preserves

1 1/2 Tbsp olive oil

1 Tbsp soy sauce

1-2 peeled garlic cloves, minced (a garlic press is the easiest)

1/2 Tbsp Dijon mustard

2 ripe peaches, halved and pitted

Directions

Heat grill to medium heat. Lightly oil the grate (or I like to use non-stick aluminum foil - bonus: no mess on the grill to clean!). Salt and pepper the chicken, Mix peach preserves with olive oil, soy sauce, garlic, and dijon (a bit of fresh grated ginger might be a nice addition as well!), season with salt and pepper.

Place chicken on prepared grill and cook 6-7 minutes, turn and cook 5 to 6 minutes, brushing both sides with peach sauce (reserve about 1/4 cup for the peaches). Cook another 4-5 minutes. An instant read thermometer inserted into the center should read 165’ F. Grill the peach halves cut side down for 2 minutes, turn and brush with remaining sauce. Grill 3-4 minutes more until tender.

Serving suggestions

Serve chicken garnished with peaches with a side of wild rice pilaf or roasted potatoes, and a green salad with a citrus vinaigrette.
