Easy Spinach Cheese Squares Recipe

Spinach Cheese Squares are one of our favorite go-to recipes. They are perfect for a grab and go breakfast for busy weekdays, but delicious and fancy enough to work for a weekend brunch celebration. Every single time I’ve taken these anywhere, they disappear in record time and I am asked for the recipe, so here it is! You’re welcome!

Any hey...spinach! So automatically healthy, right? Okay, yes they have cheese. And butter. And cream.

BUT they still only clock in at 142 calories each, and I’ve even gotten them lower by cutting the butter in half and using all whole milk. I actually prefer them with only half the butter.

Don’t skimp on the cheese, though. Any calories saved are not worth the sacrifice in flavor.

This is an old-fashioned recipe that was passed on to me from a friend (thank you Nancy!) and we’ve experimented a bit with it - it turns out it is pretty flexible.

We’ve successfully substituted King Arthur measure for measure gluten free flour for a GF version.

And we’ve mixed up the cheeses, subbing in some crumbled feta for a nice change of pace.

Using the food processor makes these super easy to put together. And they also freeze extremely well - just reheat in the microwave for an instant breakfast or substantial and healthy-ish snack.

They are a wee bit addictive in a creamy-salty kind of way, but I justify them with the lure of protein and the healthy amount of vitamin packed spinach! The crispy corner pieces are my favorites :)

Spinach Cheese Squares

Makes approximately 24 2” squares

~142 calories/square

Ingredients

  • 4 Tbsp butter

  • 4 large eggs

  • 2/3 C 2% milk and 2/3 C light cream

  • 1 lb mild cheese, shredded*

  • 16 -20 oz frozen chopped spinach, thawed and drained of excess water

  • 1 onion, chopped

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 C flour (or King Arthur measure for measure gluten free flour for a GF version)

*NOTE: I use ½ cheddar and ½ Monterey jack – I’ve also used crumbled feta and Monterey jack which is delicious as well. Feta is a natural companion for spinach.

Directions

  • Set oven to 350’

  • Add the butter to a 9 x 13 pan and melt in oven

  • In a food processor (or blender), combine onion, flour, spinach, eggs, baking powder, and salt.

  • Transfer mixture to a large bowl and stir in the milk and cream and ¾ of the cheese.

  • Pour into pan over the melted butter and top with remaining cheese.

  • Bake for 35 minutes until set and cheese is melted and beginning to brown.

  • Cool in pan, then cut into squares.

Serve at room temperature or warmed in the microwave.

These freeze extremely well also, and I love to keep a bag of them in the freezer so I can extract one and zap it for a quick, delicious and nutritious breakfast or snack!
