It is peach season! This is, perhaps, my favorite time of year for many reasons…warm weather and an abundance of local peaches chief among them.
I made peach stuffed French toast with some of the seasons bounty, and it was delicious, so I thought I’d share that with y’all today along with links to some of my other favorite each recipes.
I recently found myself in possession of a leftover half brick of cream cheese, a basket of peaches, and a leftover half a baguette one morning this week. So what’s a girl to do?
I decided that list of ingredients was a message from the universe that I should make stuffed French toast, after all, is French toast EVER the wrong answer? I think not.
SO what follows is the ‘recipe’ for what I did - 10/10, would recommend!
Peach Stuffed French Toast
Ingredients
Baguette
4 oz cream cheese, softened
2 Tbsp powdered sugar
1-2 peaches sliced or chopped
2 eggs
1/2 cup milk
1/8 c sugar
dash of cinnamon
Vanilla (optional)
Butter for sautéing
Powdered sugar or maple syrup and peach slices to garnish
Directions
Mix together cream cheese and powdered sugar (I used an immersion blender for this and added a splash of milk because I hadn’t softened the cream cheese, but a food processor or hand mixer would also work)
Slice baguette into ~ 2” thick slices
Cut a slit in the bottom of the baguette slices and remove a little of the interior to make room for filling
Stuff the prepared slices with a spoonful of cream cheese mixture and a couple slices of peach, press to seal
In a separate bowl beat together eggs, milk, sugar, cinnamon and vanilla
Dip each side of the stuffed bread slices into the egg mixture until thoroughly soaked
Melt a tbsp of butter over medium heat and sauté the French toast until golden brown
Dust with powdered sugar and serve warm with peach slices and maple syrup
Of course there are a zillion ways to use fresh peaches…add them to salads, grill them in an entree, make our favorite peach cocktail, or use them in a host of dessert options from Peach Cobbler to Peach Melba parfaits.
Last weekend I made a stellar whipped feta appetizer dip with fresh peaches and hot honey that wafted across my social feed.
For this fleeting season, I plan to eat peaches in some form every day!
